The Real Deal: Oregon Coast Wasabi

Standard wasabi—that blasting cap of pale green paste placed next to the pickled ginger in most sushi bars—should not be confused with the real thing. Real wasabi, grated from the plant’s central stalk (or rhizome) is to this incendiary paste as fresh-squeezed orange juice is to Tang.
